About One Bite for Kensley - her story

One Bite for Kensley is more than a cookie business, it’s a purpose driven brand inspired by my daughter, Kensley, and her courageous journey with pediatric cancer.

Kensley faced more than any child ever should — yet she carried so much light with her. Kensley loved to bake. Some of our sweetest moments were spent in the kitchen with her and her nana — mixing, laughing, sneaking tastes of dough, and creating memories that felt normal even during the hardest days.

Though Kensley did not like sweets — and would happily tell anyone she didn’t — she loved to bake and found pure joy in watching others taste and enjoy what she created. Baking was comfort. Baking was connection. Baking was love.

After Kensley’s passing at the young age of 4, One Bite for Kensley was born as a way to continue her legacy and to help me navigate my grief. What started as healing through baking became a way to share Kensley’s story — her strength, her light, and her generosity — with others.
